The colour immediately captivates with violet hues that meet a deep, dark ruby red tone. On the nose, its rusticity is immediately expressed with notes of raw red meat, not always extremely ripe red fruit, blackberry and prune, and cut herbs. In the mouth, its apparent roughness, expressed especially in its youth, returns in full, given by a sharp contrast between the wine's acidity and its tannicity. In the perfectly ripe and/or late versions, however, the pulp and alcohol content of the whole make it decidedly soft and warm, of immediate pleasantness, and with ageing it succeeds in expressing even different and intriguing notes such as tobacco and spices. Its particular combinability, due to the two components - acidity and tannin - described above, make it a wine suitable for savoury and long cooked meat preparations such as stews or hard cheeses made from raw milk.
