A perpetual reserve is different than a solera. To make it simple, you can imagine 2 barrels. 1 full and 1 empty. You transfer half of the full one in the empty, so both are at 50%. Then, you add 50% of the new harvest in each one. You'll bottle one of the tank, and you keep the other one to star again the next year! Cedric uses this method to strike a masterful balance between the freshness of the new vintage with the complexity and depth only "old wines" can bring.

Made from 80% Meunier and the rest Pinot Noir, the NV Champagne Blanc De Noirs Eugene is a perpetual reserve blend spanning from 2002 to 2021. It pours a rich golden straw color and offers a commanding presence in its notes of graham cracker spice, orange peel, ginger, and wild cherry. Pillowy and rounded, the palate is supple and juicy with red fruit and a saline lift off the finish. This beautiful wine is singing now, and it should hold up nicely over the coming 8-10 years.

Hints of dried thyme and saffron accent the sleek profile of lemon curd and raspberry sorbet flavors and subtle smoke notes in this firm, linear Champagne. The finely detailed mousse assists the overall balance, but this would benefit from a food pairing, perhaps some smoked salmon and creme fraiche. Disgorged December 2017. Drink now. 333 cases imported.
