H. Billiot Fils Cuvée LaetitiaThe back-story: This was always a profound, sometimes inscrutable but reliably significant Champagne, a tête-de-cuvée consisting of the best lots from every vintage. There were two of these "soleras," the first one started in 1967, and when that one was gone, another one that began in 1983. It was a leviathan of Champagne when it was on form, as it was for many years. Then about 3-4 years ago it started to show a weird cidery or pear-drop flavor that annoyed me, yet wasn't annoying (or perhaps even discernible) to other tasters. Still, I fussed at Laetitia, and learned that the cuvée had historically been aged in many small tanks, but for some reason her father-on the eve of his retiring-decided to blend them into two large tanks. Alas, one of the component tanks was the source of the flaw, and now it was there to stay. Laetitia set about to be rid of this wine, and to create a renewed and "fresher" version of her namesake wine, "without this apple taste." The youngest vintage (30%) is still 2013, newly disg 10.2016, and still majority CH; the wine's more open and accessible than last year, showing wet straw and tropical fruit and doughy Chardonnay richness; a nice thread of chalk runs through it. The "apple" thing (more like pear-drop) is fading fast but not entirely erased.

Champalou Vouvray BrutWe work our Brut according to the Methode Traditionnelle, but with a personal touch. We choose to harvest the grapes at a good maturity, early in the morning to help retain the quality of the fruit as much as possible. The must is fermented in stainless-steel tanks in our cellar. The wine then ages on its lees prior to bottling. Once bottled, the natural sugar from the grapes will re-ferment , it is this second fermentation that creates the bubbles. The wine then spends a long time, about 20 months, sur latte before being disgorged (when the crown caps are removed and the "mushroom" cork is fitted). The Brut is the quintessential party wine, ideal for the aperitif and the end of the meal, although preferably both! Its balance makes it perfect for a more sophisticated dinner as well.

The frank vinosity of the wine (roundness and alcohol) gives an impression of strength and freshness. The wine appears both broad yet tight. These various sensations produce a pure, creamy and silky textured wine. The finish is clean, slightly mineral and long. The last aroma is the grapefruit. The last impression will be remembered as a harmonious, healthy and vibrant wine. Food pairing: The Grand Cellier is a complex, pure but still juvenile wine. This wine reflects both the quality of its origins, the care given to the blending and the mastery of the ageing process. This wine pairs well with soft in texture meals. Take care to accompany the aromatic character (mineral, citrus, fresh herbs). We suggest you select fish such as sole or turbot with a mild sauce, fine crustaceans (prawns) or nice pieces of white meats (veal with citrus). You should keep this Champagne in cellar in a few months (3 or 4) to taste it as an aperitif. If you wish to get richer and complex flavors, keep it longer in cellar (2 or 3 years). Le Grand Cellier remains an audacious and elegant Champagne.
