Sutor Merlot 2012
About the wine: Made from grapes grown on a hillside vineyard with flysch
soil called Jamce in the commune of Podraga in the Vipava Valley. The yield
is extremely low at 25 hectoliters per hectare, which ensures a wine of
concentration and depth. To put this in context, these yields are lower than for
most burgundy grands crus. A small amount of cabernet sauvignon is added
to increase complexity. To add structure, the wine is aged in a mixture of new
and one-year-old barriques for the first year and then given further aging in
older wood. Bottled unfiltered.
Aroma: Creamy nose showing vibrant red fruits with a touch of oak influence.
Taste: A long, deeply fruited wine with flavors of crunchy red berries. Good
acidity and freshness, with a splash of tannin showing through at the finish.
This is definitely a food wine.
Food pairing: Perfect with red meats, pork and white meat dishes, light pasta
dishes, risottos, and hard cheeses.
