DIMMI is distilled from certified organic northern winter wheat grain into a pure biological spirit by the Frandino family in the Piedmont of NW Italy. Following distillation the base spirit is transferred to Giacomo Sperone S.p.A in Milano where two infusions, blending and bottling occur. Infusion #1 is an old family formula of herbs, botanicals and spices that was written in Torino in 1932 by Ferdinando Martini, the maternal grandfather of Paolo and Antonio Sperone the third generation brothers who produce Dimmi. Infusion # 1 is influenced primarily by assenzio gentile (wormwood) followed by nuances of liquorice, vanilla, bitter orange, ginseng and rhubarb. Infusion #2 is a modern day blend of peach and apricot flower essences. The masculine strength of the herbal infusion and the feminine elegance of the flower infusion are united so they work together "flavoristically" by blending a small "touch" of Nebbiolo grappa into the spirit.
